First op!

Went for an incision on the right side of my inner cheek due to the previous wisdom tooth removal's suture didn't dissolve completely.

Thankfully I went through the trouble of going via the subsidized rate otherwise it's like 50% more expensive and the procedure is done the same way!

I'm quite happy myself that I managed to go through everything well and I'm now on the road to recovery. No pain was felt at all too! Only that my right cheek is swollen.

I really hope that this is the LAST procedure that will be done to my mouth as I can't afford to use up any more of my MC's!!

Buttermilk scones

Whenever I dine at Popeyes, I seldom eat the biscuit (which I later knew from BunnyBoi) that they're actually called "scones". He would always say that they're nice and it's his favourite, hence I've decided to try my hands on it!

I adapted the recipe from: http://www.nofrillsrecipes.com/2012/07/buttermilk-scones.html?m=1 and I like that the recipe makes out 5 instead of a dozen like other recipes do.

Ingredients:

  • 200g self raising flour
  • 1/4 tsp salt
  • 2 tbsp sugar
  • 50g cold butter
  • 150g buttermilk (I used Meiji low fat milk + 2 tbsp lemon juice & let it stand for 30mins)
Steps:
  • preheat oven to 220 deg celsius
  • Sift flour 3x
  • combine all dry ingredients in a bowl and manually whisk it to combine
  • add cold butter (straight from the fridge and cut into cubes) and use fingers to combine all together until it looks like bread crumbs
  • create a well in the middle and add milk (careful not to add too much like I did!)
  • use a spatula to combine all ingredients together until it becomes thick and sticky
  • transfer to lightly floured tabletop and lightly knead (i've read from various blogs that we shouldn't knead too much as it may cause the scones to toughen.)
  • use a cookie cutter and transfer the scones to place them beside each other onto baking tray lined with parchment paper.
  • bake @ 220deg celsius for 15-20mins (however for mine, i don't know why it took me close to 60mins for the browning on top to surface!)
  • transfer onto wire tray to cool
  • serve warm with jam/butter any seasoning of choice

Unfortunately, I've added too much milk onto the batter and it turned out quite gooey, hence I've to keep adding more flour for the texture to be right before lightly kneading them into a dough to be cut out using a cup.

Another thing to note was maybe the circumference of my cup was too big? Instead of 5 pieces I managed to cut 3, & it took about an hour for the scones to brown at the top.

I was about to think that "this is yet another failed attempt" when......

TAAAADAAAAA!!!

I'm so so happy! Thank you @nofrillsrecipe for this wonderful recipe! :)

Best company ever!

My colleagues treated me Domino's lunch for my last day at work today!

We ordered Hawaiian Paradise & Classified Chicken. I like that the latter pizza has a creamy cheesy flavor! Their twisted breadstix is sprinkled with cheese powder and it would definitely taste better toasted!

Domino's delivers your pizza in 30 minutes and any minute later, you'll be given a free pizza on the house! Though the down side is that they provide additional chili flakes yet none for cheese powder.

We also bought Pokka green tea from the convenience store just below our office and I must say that the new version of it without sugar really tastes soooo much better! It's just Japanese green tea chilled. One sip on it and it's decided that I'll never want to drink the original one anymore.

Went for a once-in-a-blue-moon jog around my neighbourhood and I passed by the same man after 20 minutes and he only managed to cover about 5m distance. It struck me that we will all grow old one day, and it's up to how you take care of yourself now and what fates lies for you in future.

From my instagram @raayche :

I am thankful that I can see the moon shining ever so brightly while feeling the evening breeze in my hair. More importantly, I am blessed to have a healthy body that doesn't fail it's functions on me, enabling me to enjoy this sight with ease. As the saying goes "Live quietly in the moment and see the beauty of all before you. The future will take care of itself."

It's been a memorable & thankful day for me as I am glad that I have met my wonderful colleagues and felt how it is like to work in a company that doesn't have any hierarchy and politics. This is the first time I felt so reluctant to leave but as my contract was over, indeed all good things must come to an end.

I sure have gained valuable insights that will be engraved in my memory & that genuinely nice people still, and do exist in this wretched world. :')

Operation eat clean

BunnyBoi and I went on a #eatclean diet ever since we came back from Taiwan but it was really hard to stick to the plan.

Here are some of the healthy food that we made!

Purple & green lettuce with grilled chicken, eggs, garlic butter croutons, cheery tomatoes and potato hash.

Using the leftover chicken & purple lettuce and ham for lunch at work.

Oven toasted salmon with garlic for our lunch for the very first time which was really easy to prepare and oil-free! :)

Chicken thighs, potatoes & home made teriyaki sauce!

Was supposed to cook chicken chops for lunch today but I wasn't able to find any boneless chicken thighs from NTUC today as all of their chicken thighs comes with their bones attached, so I went to separate the meat from the bones on my own.

Hence this is what I cooked today! :)

I also made teriyaki sauce but I didn't really follow the recipe hence the texture of the sauce turned out more towards like soy sauce instead of the sticky & thick teriyaki sauce. Shall boil the sake (i substituted rice wine to sake) first instead of combining all the sauce ingredients together next time!

& guess what... I realized I'd forgotten to cook broccoli! Unhealthy dish but only for today k!

It's my first time cooking this dish & eating potatoes with it's skin on too! I think I like it this way better now all thanks to BunnyBoi's recommendation! I'm glad he enjoyed lunch today! Yay! :)
